Does the cow’s milk flavour change with the seasons?

Yes. Lush spring grass results in sweet milk with slightly lower butter fat. In the winter, when we supplement with alfalfa hay, the milk has a unique “grassy” smell and the solids (protein and butter fat) go up.

Can we taste the cheeses if we come to the farm?

How long does cheese last?

For most hard cheeses, the “best before”, is really just a guide to optimum flavour, as the cheese doesn’t suddenly “go bad” at that date. Optimum flavour is a matter of personal taste and culture. The French, for instance, like their brie  quite ripe, with a runny centre. Some Canadians may find that too strong for their taste. It’s up to you. Fresh cheeses, however,  should be consumed  by the Best Before date for best flavour.

Are you certified organic?

We are not certified organic, however are able to have strict control over our milk quality as we know exactly what our cows are eating and how our farm land is managed.
